Twice baked potatoes
Wrap clean potato in plastic wrap and put in microwave for 4-6 minutes. After potato is cool enough to handle, cut in half and scrape out innards.
Mix:
One laughing cow wedge (I used garlic and herb flavor)
Tablespoon butter
Three Tbs sour cream
Two Tbs grated “unexpected cheddar” (any cheese works)
Salt & P
Mix the above with potato innards, put back in potato “shells”, top with parm, bake for 20ish minutes at 400 degrees.
